This June, Rimba Sky at Ambong Pool Villas proudly unveils an exciting culinary adventure with the launch of our new menu titled "Straits of Malacca." As a place where diverse cultures converge, the Straits of Malacca has long been a melting pot of flavours from Arabia, India, Thailand, Malaysia, Indonesia, and Singapore. This historical passage has connected diverse civilisations and given rise to a rich culinary heritage that is both diverse and unique.

Introducing the "Straits of Malacca" Menu

On June 21st, we launched an exclusively curated menu that encapsulates the vibrant culture and rich heritage of the regions along the Straits. Our chefs crafted each item to take you on a gastronomic journey reflecting on the flavours and cooking traditions across these waters.

Featured Dishes

Smoked Duck Breast Rendang

Our first highlight is the Smoked Duck Breast Rendang. This dish reinterprets the classic Malay rendang, a rich and complex curry traditionally enjoyed in the region. We prepare it with Rimba's rendang sauce, enhanced with an extra swirl of coconut cream for a smoother texture. On top, a beautifully seared smoked duck breast adds a smoky depth, complementing the spicy and umami-rich base. For an added twist, sweet potato or ubi gnocchi can be nestled into the rendang sauce, offering a delightful contrast and more body to this indulgent dish.

Portuguese Ikan Bakar Grilled in Banana Leaf

Our second highlight is the Portuguese Ikan Bakar, meaning "grilled fish", which is grilled in a banana leaf. This dish is a nod to the culinary traditions of Portuguese influences, seasoned with a rich blend of Peranakan herbs and spices. The fish is marinated in aromatic spices, then wrapped and grilled in a banana leaf to infuse it with a smoky flavour while retaining its moist texture. This age-old cooking technique is common across Southeast Asia and enhances fish's delicate flavours.
